Paleo Pancakes - my breakfast.
Mash two bananas. Add an egg, and mash it. Add a heaping spoonful of almond butter. Mix well. Plop spoonfuls (like cookie dough) into coconut oil in a skillet over medium heat. Brown each side. Top with cinnamon. Makes about 12 little silver dollar pancakes.
These are great with grade B pure maple syrup or raw local honey. But if you’re doing Whole 30, they’re good on their own, or topped with berries & grated coconut.
